Descripción de la variedad

The 'Asparges' potato, also known as 'La Ratte' or 'La Ratte du Touquet', is a heritage variety originating from Denmark or France in the late 19th century. This fingerling potato is renowned for its unique nutty flavour and smooth, buttery texture.

Tuber Characteristics:

  • Shape: Small, elongated, and slightly curved, resembling a finger or small horn.
  • Skin: Thin, golden-yellow with shallow eyes.
  • Flesh: Firm, waxy, and golden-yellow, maintaining its texture upon cooking.

Agricultural Notes:

  • Yield: Typically low, contributing to its status as a boutique variety.
  • Harvesting: Often hand-harvested to maintain tuber integrity.
  • Disease Resistance: Susceptible to late blight on foliage and tubers, and to potato cyst nematodes

Storage:

Due to their thin skin, 'Asparges' potatoes have a shorter storage life compared to other varieties. It’s best to store them in a cool, dark place and consume them relatively soon after harvest to enjoy their optimal flavor and texture.

Asparges potato is a gourmet variety cherished for its exceptional culinary qualities, particularly its nutty flavor and creamy texture. While it requires careful cultivation and handling, its culinary appeal makes it a favorite among chefs and food enthusiasts.
